JELLY CARROT JUICE SNACKS:

My recent post for Cosmopolitan Jelly Shots got me thinking…
why not make some non-alcohol ones for an onboard snack?
I know that health-wise, eating real fruit is better that fruit juices for many reasons,
but if we are unable to always have fresh fruit available on the boat this could be an alternative…
relatively healthy…
quick energy snack…
easy to make…
doesn’t take up a lot of room…
not sticky or messy (Captain hates messy)
So I went to the market to pick up some fruit juice that had no added sugar
and didn’t I come home with something else…
100% carrot juice!
CARROT JELLYS
2 cups carrot juice
6 packets of gelatin
In a small saucepan, sprinkle gelatin over juice to soften for about 5 minutes.
Gently heat until gelatin is completely dissolved.
Pour into a container or jelly mold.
…this particular container fits really well in our little boat refrigerator…
Refrigerate until set (needs no more than about 2 hours)
Un-mold or cut into little squares or shapes.
Refrigerate those that ‘escape’ snacking.
…I feel my eye sight improving already…
…and I’m going to have to get me some more gelatin…
