When I cook bacon onboard
I usually add a few extra strips for future meals
like BLT’s
(there’s that ‘cook once eat twice’ thing)
or this little dip,
perfect for an impromptu cockpit party
or a pot luck offering.
The original recipe is baked for 15 minutes in a 350 ° oven
but it needs only a minimal amount of heat to render it that
perfect texture for dipping your favourite crackers or veggies
(use a heat proof dish and pop in a covered barbecue for a few minutes
or heat gently on the stove top in a small saucepan).
I found that if I just mixed it together and didn’t heat it made a great spread for crackers.
1/2 onion chopped
1 garlic clove, minced
1 tbsp butter
8 oz cream cheese
3/4 cups grated Parmesan
4 strips of cooked bacon, crumbled or cut into small pieces
1/2 tsp freshly ground pepper
Cook onion and garlic in butter until onion begins to brown.
Mix all ingredients together.
Heat as suggested above and serve with crisp veggies
or serve at room temperature spread on crackers.
So yummy.
So easy.
